1. I didn’t add and it was fine which was great.

1. Arrowroot helps thicken the pancakes and give them structure.
2. Yes you can prepare in advance, just whisk the mixture before use.
3. The coconut milk in the recipe is the one that is usually sold in 1L cartons, not the 400ml coconut milk that you generally use in a curry. Almond milk will be fine though.
4. A handful or half a cup of frozen blueberries.
